When whole, anchos are deep reddish brown approximately 2-3 inches wide and about 4 inches in length with a sweet spicy flavor. When fresh they are commonly referred to as poblanos. When dried anchos are flat, wrinkled, and usually heart shaped. The ancho has a sweet flavor when dried ; and are primairly used in authentic Mexican and Southwest cooking like chili, sauces and tamales.
